Amazon.com Review:
A good chef's knife becomes your daily kitchen companion. It's used for everything from prepping steaks for the grill to finely mincing onions, and chances are you'll reach for it every time you cook--so it better be good. This lower-priced line from Henckels is a great value: excellent quality knives with their standard lifetime warranty. There's good balance, and the handles are a shade heavier than other lines, which some cooks will prefer. The 8-inch blade length is the most practical for multipurpose use, and regular sharpening will keep the stainless-steel blade razor-sharp. It's only minimally flexible, which makes it a great choice for vegetables such as potatoes and turnips. While it's dishwasher-safe, unless it needs sanitizing after use with raw meat, it's often easier to hand wash. --Jill Lightner

Rating: 1 out of 5 stars - Not worth the money
My knife fell apart after 2 years of moderate use. Just like a custumer's picture you (currently) see on Amazon. The rivets rusted and the handle fell off. I've never had this problem with much cheaper knives. Henckels sent me a replacement after a couple of months but it's not a retail package - looks like a rejected defective factory output (scratched handle and uneven blade) - so I can't even sell it on ebay.

I bought a couple of Japanese Shun knives on sale at Amazon while waiting ... Read More

Rating: 5 out of 5 stars - Henckel 8' Chef's Knife
Great knife especially at the sale price of $40.00.
Very sharp + good balance = smooth cutting.

Rating: 5 out of 5 stars - Great Knife!
Not a master chef here but the product works great and exactly as advertised. Works a lot better in terms of cutting and handling than my previous knife. Great product for the price!

Rating: 3 out of 5 stars - Spend the extra on a Wusthoff....
I have been using a J.A. Henckels set of knives and a set of Wusthoff repeatedly for a couple of years now.One set is at my job, and one set at home.I expected more from the Henckels set, because they do have a nice reputation after all. However, they were so lightweight that they feel flimsy in my hands, and the blade bends, even sharpening with very light pressure. Most importantly, the set of Henckels knives that I have experience with (perhaps the low-end of the spectrum?) didn't cut at easily ... Rating: 5 out of 5 stars - best knife i have owned!
I have been working in restaurant kitchens as a cook since i was 16, I've gone threw a lot of knives but this one is by far the best. Its a great knife for the price, the handle feels nice to hold. The weight is well balanced. Aside from some of the super high end knives (which i would never use in a restaurant)this is a great knife for the working cook/chef. its been my work horse for about almost 2 years now and i am glad i found it.
