Calphalon Commercial hard-anodized pans are made for the more serious cook who is looking for kitchenware built to last a lifetime. This straight-sided, 4-1/2-quart saucepan, with its heavy-gauge aluminum bottom and sides, is great for evenly reducing larger-volume sauces sans hot spots. The curved cast stainless-steel handle is easy to grip and stays cool, thanks to a V-shaped split where it meets the pan. There's also a short looped utility handle on the opposite side of the pan for heavy lifting. The nonporous and nonreactive hard-anodized surface resists sticking and doesn't affect the flavor or color of food. It's also tough enough to handle stainless-steel utensils. Unlike pans with plastic or wood handles, the extremely sturdy all-metal construction provides you the flexibility to take the pan to the oven or broiler. But do remember to hand wash your Calphalon pans--dishwasher detergents are bad for the finish and their use voids the lifetime warranty. --Dale Steinke

- The Perfect Pot
I've had this pot for about two years and absolutely love it.It's great for cooking anything, from steamed broccoli to a small batch of soup.Heats up evenly and quickly, the handle stays cool, and it's easy to pour from, without drips.Highly recommended.

It's a great quality piece, but the 2 1/2 qt. pan I have in the same product line has a nonstick surface inside.This one gets a tiny bit sticky (don't boil your milk in it, etc.).I would have thought that if they are both in the "commercial hard-anodized" line that they would be made of the same material, inside and out.Go figure.

Calphalon Commercial hard anodized has the same durable surface as the Professional line, but with stay-cool handles and a better handle on the lid.I found this on a sale table at Marshall Field ... and have found that I often use it instead of my 8 quart stock pot.It's great for boiling potatoes, small quantities of pasta, poaching chicken breasts for use in other recipes, and many other common cooking tasks. I have been slowly adding pieces to my collection of cookware and I suppose I could have purchased an entire set of some lessor brand but Calphalon is my cookware of choice.Unfortunately the pieces that I want to add are simply too costly just to go buy at once.Although I did get a nice starter set on sale to get me going.
