Amazon.com Review:
The indispensable workhorse of any cutlery collection, a cook's knife performs a wide variety of cutting tasks, from fine chopping to dicing and slicing. The heavy 8-inch blade of this definitive model provides enough heft to allow the knife rather than the cook to do the cutting labor, but is more maneuverable than larger models. The length of the cutting edge makes quick work of all slicing jobs. If you don't yet own a cook's knife, or want the best investment for your dollar, this 8-inch model, which combines size with ease of use, is the one to choose.

Part of the Classic series, this knife represents two centuries of unexcelled Wüsthof craftsmanship. Like other cutlery in the series, it's hand-forged from a single piece of stainless steel for maximum strength; the hand-polished blade is exactingly calibrated to be hard enough to resist dulling yet soft enough to take a keen edge when it's honed or sharpened. Dishwasher-safe and with a traditionally shaped, ergonomically designed handle that is triple-riveted for durability, this knife brings a guaranteed lifetime of low-maintenance cutting to any cook who owns it. --Arthur Boehm

Rating: 5 out of 5 stars - Regarding "sharpening"
I've been reading these reviews as foreplay in anticipation of buying an 8" Wustof Classic Chef's Knife. For more than 30 years my old Chicago Cutlery set has worked, but it's time to step up to the real thing.
There is much good information in these user reviews, but I (no expert) detect some confusion in discussion of the need for a "sharpening steel." If you are serious enough to own these knives, read up on knife care. A steel does not sharpen a knife, even if the product name is "sharpening ... Read More

Rating: 5 out of 5 stars - It's not a classic for nothing
The Wustof Classic series enjoys two great advantages over its other kitchen competitors -- balance and time-tested design. It stays in your hand, does not tend to tip forward or up when you relax your grip, and best of all, allows you to cut precisely when needed rather than broadly. When you're ready for what will be your favorite, buy this one. This 6-inch Wusthof Classic Chef's Knife saves money with more expensive meats because it allows you to leave the meat as intact as possible by quickly and cleanly ... Read More

Rating: 5 out of 5 stars - Classic German Steel
Good, sturdy, well-built knives in the Solingen tradition, and this one is a good handy size.

Rating: 5 out of 5 stars - Seven different knives
Amazon considers all sizes of this knife - from 4.5" to 10" - a single item for reviews. As a result, half the reviews will not apply to the size you are looking at.The reviewers naturally assume their review will only apply to the size they are looking at, which may may well be different from what you're looking at now.

I have owned three sizes of this chef's knife, one with the 8" blade, one with the 5" blade, and one with a 5.6" (14 cm) blade. If you are looking for your first chef's knife, ... Read More

Rating: 5 out of 5 stars - The Sweetest Litte Chef's Knife Ever
I've been a fan of Wüsthof knives since I worked my way up to sous chef while paying my way through school. All the cooks had different knife sets (one of my favorites was a LamsonSharp set, forged locally in Massachusetts) and I got to try many styles of the French and German blade shapes. I couldn't afford good knives at the time, but after lots of testing, I found the German shape (strong curve towards the tip) the most pleasant to use; I prefer rocking slices to pulled slices (i.e., French style). Wüsthof ... Read More
