This 8-in. High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. - It's a serrated knife...
Most serrated knives will cut the same as they are far different from a standard blade. I personally love Global, I use a Global 10" chef knife (24cm) for my Culinary Classes as well as the 3.5 inch western style paring knife but a serrated knife you can settle with a much cheaper one and get similar performance like the one from "F Dick" F Dick 7" Offset Bread Knife which is nice because it has an offset handle as well. I purchased this knife several months ago to finish off a new set of Global knives.It replaces a bread knife I bought at the grocery store when I was a student.Like all Global knives, it looks great, feels good in my small hand, and cuts nicely.I was surprised, however, to read all the other ecstatic reviews about this knife because I find its performance to be average, not significantly better than my 20-year-old grocery store bread knife.Don't get me wrong:I like the knife, I'm glad I ... I have tried a wide variety of knives out there.I quickly learned that Japanese knives are the way to go.After trying several Japanese brands, Global really stood out.I would recommend not only this knife but any Global knife to anyone looking for a quality knife.

Buy this knife if for no other reason than it makes minimal crumbs when slicing baked products, less mess to clean.Also does an excellent job chopping chocolate.
