This 10-in Diamond Sharpening Steel has a diamond-honed surface to keep your Global knives razor sharp.The steel is carefully weighted and features the same distinct handle design as the knives. This Diamond Sharpening Steel is terrific for sharpening all your knives on a weekly or monthly basis, depending upon how often you use your knives. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook.The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor.The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. Although steels often are touted as sharpening tools, fewactually sharpen knife blades, but they do perform the vital task ofrealigning, or resetting, edges, which bend when contacting a cuttingsurface or other hard object. Because this tool's chrome/vanadiumstainless-steel rod contains hundreds of thousands of diamondparticles, it's hard enough to somewhat sharpen a blade. Using thissteel won't replace a professional sharpening job, which proceeds fromcoarse grinding to ever-finer grinding at tightly controlled angles.However, it will lengthen intervals between sharpenings better than asteel without diamonds because it accomplishes the final task of aprofessional sharpening, which is polishing the edge to a finepoint.
Exceptionally well made, this tool's rod has a solid core and has beenplated with hard chrome for additional resistance to abrasion and toextend its life. - You won't want this scratching your Global knife after using a waterstone
I bought this product based on the other customer recommendations. It really is an amazing steel, but if you already have a very fine Japanese waterstone (mine is 6000 grit) that gives your Global knives a mirror-like razor-blade edge (MUCH sharper than they come from the factory), you're not going to like the way the diamonds on this steel scratch that finish. Also, you lose some sharpness. After using a 6000-grit waterstone I can literally and easily shave with my Global knives, but not so after ... Read More

I'll be the first one to admit that this is a LOT to pay for a knife sharpener.That being said, I wouldn't buy anything else.It does such an amazing job sharpening my Global knives, as well as others.Just a couple strokes, and my knives are like new again.If you care enough about knives to buy a Global in the first place, you shouldn't hesitate when it comes to buying this.

This works much better than a normal steel on my Global knives. Can't think of anything wrong with the diamond steel. Sure it isn't inexpensive, but I'vegot some diamond tool sharpeners for the shop and they aren't cheap either.
At some point, the diamond steel won't be sufficient to bring back a good edge. At this point I bring out the Yoshikin MinoSharp Water Knife Sharpener to reform the edge and follow this up with a couple of strokes on the diamond steel. Not factory sharp, but ... Read More
