Did You Know:
A Granton edge, or "kullenschiff" edge, has hollowed out grooves on the sides of the blade. These grooves fill with the fat and juices of the product being sliced, which allows for thin, even cuts without tearing or shredding the meat.

I LOVE to cook and am avid cook; I would love to be able to purchase some more knives like my Shun, but I don't have the money at this time. This knife is a good knife that does the job.

I know this is a Cook's Illustrated, Cook's Country, and America's Test Kitchen (all the same company by the way) recommended knife, but it's a poor recommendation. I have used this knife in a 7 day a week food service kitchen for about a year. It is absolutely the best knife I have ever used. I run it over a honing stick a couple of times before each use, and it is still as sharp as day one. As with any knife I suggest hand washing it to avoid any unnecessary wear and tear.

In need of a good chef's knife? I strongly suggest this one.

The only "con" is the plastic handle, but that is only aesthetics.

I have owned my 8" Forschner Victorinox knife for about 2 years. It works as well today as the day it arrived. I have had to sharpen it maybe twice since I've owned it. I am not a professional chef by any means, but this knife is worlds above the cheap knife-set knives (I think Farberware) that I had previously been using. This Victorinox 6-Inch Chef's knife is a great value because it is extremely sharp, holds an edge, and lasts forever. It saves money with more expensive meats because it allows you to leave the meat as intact as possible by quickly and cleanly removing only silverskin, fat, and gristle. The picture of this product is misleading, this knife is not serrated as pictured and it won't slice certain things like bread or tomatoes. This kind of knife needs sharpening every couple of weeks in order to be decent. It's going back.
Unfortunately there are no long serrated utility knives, so I was hoping this one would work. Longest I could find was 4 in.
