Heavy-gauge aluminum is responsive to temperature changes. These pans feature the original Calphalon hard anodized surface, which is stick resistant, meaning that it sticks when you want it (when your searing, browning) and releases when you need it to(when your food is ready). If you know how cast iron cooks, you know how the hard anodized cooks, but hard anodized has many beneifts that make it better choice- aluminum is a better conductor than iron, you never season your pan(so you dont have flavor transfer from dish to dish), and it doesn't rust! All pans are spun or drawn into shape, which makes the entire pan (sides as well as bottom) the same thickness, which guarantees even heating throughout. The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. The previous Caphalon pieces I'd purchased are great. Unfortunately this set was a complete waste of money. Everything sticks to it.

These pans have been great. I like being able to cook at a lower temp. My only complaints are the lack of a small 1qt sauce pan, and that food does stick to the surface more than I expected.

Absolutely love my new calphalon cookware. It was an outstanding price, about half of what I found it for in stores. Easy to clean, warms up quickly and cooks evenly.

For $150 its a great price for 5 pots and pans.However, you get what you pay for.
Assuming they are delivered with flat bottoms, they continue to warp very easily and are poor choices for smooth top stoves.For whatever reason, they do not saute well.The balance and handling is poor.Between the riveted handles and the lack of a non-stick coating, keeping them clean is tough.

Having received these pans and used most of them I am bit perplexed by the negitive reviews which mostly complain about unbelievable sticking problems when cooking with them. Let me first say that I was a professional chef/cook for more than 20 years and worked all around the world. The industry standard in most pro kitchens is generally heavy aluminum with teflon coating only being found in egg pans. Caphalon is generally considered too expensive to be used in restaurants, but at these new prices ... Read More
